Ingredients needed

Brinjal / Eggplant_cooked – 50 Grams
Drumstick / Drumstick pods – 20 Grams
Sambar Powder – 1 TableSpoon
Onions Raw – 20 Grams
Tomato Raw – 15 Grams
Coriander Leaves / Cilantro – 2 Sprig
Tuvar Dal / Toor Dal / Split Pigeon peas / Thuvaram Parupu – 50 Grams
Asafoetida (Hing) – 0.10 Grams
Red Chilli Spices / Chilli Powder – 1 TableSpoon
Canola Oil – 0.5 TableSpoon
Water – 200 Milli Litre (ML)
Salt – 1 Teaspoon

Turmeric Powder / Turmeric Spices – 0.25TableSpoon
Temper:
Curry leaves – 2 Sprig
Mustard seeds – 2 Grams

The Preparation Methods:

Step 1: Remove the edges of drumsticks and cut them into 2″ pieces. While cutting lightly peel the outer strings using your fingers.

Step 2: Dice brinjal and put in water. This will prevent discolouration.

Step 3: Wash the toor dal, add turmeric and cook for 3 – 4 whistles with 2 cup of water. Mash the cooked dal and keep aside.

Step 4: Meanwhile, take the drumstick in a wide vessel. Add some water and keep to cook.

Step 5: After the drumsticks are 50 % cooked, add diced brinjal,tomato and onion. Close and cook for 5-10 mins.

Step 6: Add sambar powder, Chili powder, tamarind pulp and salt.

Step 7: Once the veggies are cooked to 75%,add cooked dal , ground mixture and hing. Add some water to bring to the desired consistency and mix well.Keep on sim and bring it to boil.

Step 8: Season with mustard and curry leaves. Switch Off. Garnish with coriander leaves.
Serve hot brinjal drumstick sambar ith hot steamed rice / idli / dosas
