Egg kuzhambu or Egg Curry is very delicious kulambu using boiled eggs. Egg kuzhambu is a popular recipe in South Indian which is a good combination for rice and it is perfect side dish for idly, dosa and chappathi. It is spicy stew-like preparation. Ingredients needed
Egg Boiled – 2
Coriander Powder – 0.5 TableSpoon
Kuzhambu podi or Kolambu powder – 1 TableSpoon
Chilli Powder – 1 TableSpoon
Onion – 20 Grams
Tomato – 15 Grams
Coconut_Shredded – 10 Grams
Salt – 1 Teaspoon
Water – As required.
To temper:
Oil – 1 tbsp (sesame seed oil preferable)
Mustard seeds – 2 Grams
Curry leaves – 2 Sprig
Coriander Leaves – 2 Sprig
Garlic Cloves – 2 Count
The Preparation Methods:
Step 1: Boil the eggs, remove the shell and slit and keep it aside.
Step 2: Grind the coconut with little water and make it to fine paste.
Step 3: Soak the tamarind in 2 cups of water and extract the juice.
Heat oil in a kadai, splutter mustard seeds, and garlic curry leaves in it.
Step 4: Add finely chopped onions and tomatoes saute until it turns to light golden color, add the chopped tomato and saute well. when tomato is mushed well, add the Kuzhambu powder and coriander powder, chilli powder in it.
Step 5: Add tamarind water, salt and let it boil 15 minutes. ready well until all the raw smell vanishes.
Step 6: Now add the ground coconut paste and let it boil for few more minutes.
Step 7: Add chopped coriander leaves and swich off the stove Finally add boiled eggs to the prepared gravy. kuzhambu it covered for 10 minutes before serving.
Delicious muttai kuzhambu is ready. serve it along with a bowl of steam cooked white rice or as side dish for rotis.
