Instant Wheat Sweet Poli / Puran Poli is sweet-bread dish is favorite across Indian and has so many different variations in different states. Its preparation is very easy. First is to prepare the wheat flour dough that makes the covering of puran puri. Next is to prepare the sweet channa dal based puran filling mixture. Puran / poornam/ stuffing:
Channa dal / Kadalai Parupu / Split Bengal gram – 25 Grams
Jaggery – 25 Grams
Cardamom Powder – 0.25 TableSpoon
Outer covering: (for chappathi rolls)
Wheat flour – 50 Grams
Canola Oil – 1 TableSpoon
Ghee / Clarified butter – 0.5 TableSpoon
Salt – 1 Teaspoon
The Preparation Methods:
Step 1: Cook chana dal until fully cooked without making mushy. Drain off the excess water.
Step 2: Mash it thoroughly. You can also blend it in a mixer.
Step 3: Add jaggery and cook along with cardamom. If jaggery is not clean, then melt it in little water, filter to the dal and cook.
Step 4: Cook until the mixture thickens and forms a mass.
Step 5: Cool it completely and roll to 5 equal sized balls.
Step 6: Knead the dough with salt and enough warm water. Set aside for about 15 minutes.
Step 7: Divide the dough to 5 equal sized balls and roll a ball to puri.
Step 8: Place the channa dal stuffing in the center. Bring together all the edges. Remove the excess dough on top.
Step 9: Flatten it gently and sprinkle little flour or add oil. Begin to roll evenly until you get the desired size.
Step 10: Heat a pan and toast it on both the sides until you see golden spots.
Step 11: Smear ghee over the hot pooran poli.
Step 12: Instant Puran Poli Ready now.
