Brinjal Puli Kuzhambu is a wonderful and super flavourful curry made with the goodness of baby brinjals cooked in a tangy tamarind sauce. This is a very popular dish from the south Indian cuisine especially in Tamilnadu. Which gives a yummiest thick gravy and can be paired up with Steam Rice.

Ingredients needed

Brinjal – 100 Grams
Tamarinds – 15 Grams
Salt – 1 Teaspoon
Water – As required
Onions – 10 Grams
Tomato – 20 Grams
Kuzhambu podi or Kolambu powder – 2 TableSpoon

To temper:
Sesame seed Oil – 1 TableSpoon
Mustard seeds – 0.10 Grams
Urad dal – 0.10 Grams
Red Chilli – 2 Grams
Fenugreek Seeds – 0.10 TableSpoon
Garlic Cloves (chopped)- 2
Curry leaves – 2 Sprig

The Preparation Methods:

Step 1: Soak tamarind in warm water for 10 minutes & take the extract using 1.5 cups of water. Add Kuzhambu powder & salt. Taste it and adjust as per ur need. Cut brinjal lengthwise into 4 pieces & keep them immersed in water to avoid color change. Chop onions and peel garlic. Set aside.

Step 2: Now in a kadai , heat oil and temper all the ingredients given above in the same order. Make sure to add all the ingredients after the mustard seeds splutter. Saute everything in medium flame. Then add chopped onions, whole garlic cloves & curry leaves. Saute till it turns golden brown.

Step 3: Add the brinjal pieces, saute for sometime & then add the tomato pieces. Saute till musy. Now add the tamarind extract which we kept ready. Cover the kadai with a lid till brinjal gets cooked. Usually it takes 8-10 minutes. Keep the flame medium.

Step 4: Then open the lid and check whether brinjal is completely cooked. Check for water. Add more water if necessary. Allow the gravy to boil for 10 minutes to get thicken. Switch off the flame and transfer to a serving bowl. Add a tbsp of gingely oil & raw curry leaves.

Step 5: Serve it after 30 minutes. Mix with plain rice.
